Tassajara has invested in state-of-the-art crushing equipment that is well-suited to its whole-berry fermentation. Only the best French Oak Coopers are used for aging (Francois Freres, Remond, Vicard, Billon and Marsannay). Total production will remain just a hair over 600 cases – a true boutique by any definition of the word. In producing this impressively affordable wine, Tassajara has followed the same procedures used to craft wines that take a far deeper dent in one's wine budget!
